Happy Sunday all! This weekend has gone by too quickly, as usual. This morning I was up early so I took advantage and did my grocery shopping while the good people of the world were at church. I also stopped by Fresh and Easy to pick up some flowers. I always scout out the marked down flowers, sometimes they are half dead but I usually find some worth rescuing. Even if the clearance flowers don't look great you can't beat the prices on the rest, $7 for a full bunch! Today I found 2 bunches of sunflowers, one was $2 and the other $3.50 so for $5.50 I made these arrangements.
One is going over to my friend Andria's house. She teaches with me and has 2 sweet boys. Her husband is on deployment right now and we are taking turns bringing her treats/dinner/a pick me up :) I also made a rigatoni casserole and some egg mcmuffins (which you'll hear about soon) and picked up some of my favorite mango sorbet. Her 2 year old can't have dairy so I had to get a little creative!
While I was prepping her meal, I was able to clean out my refrigerator where I found strawberries that I have no idea where they came from...oops! It's a good feeling to have it clean, now how long will it last...?
I also got the gift for our friends Ty and Tori wrapped. They are getting married up in Flagstaff next weekend! Dan is a groomsman and we are very excited! Our other good friends Joe and Natalie are coming in from Charlotte and we're going to road trip it up there together. I'm planning on taking Friday off of school so I'm working on sub plans and getting the house ready for company :)
I needed a dress for said wedding so I met Ruth out and about to help me pick one out. She is great to shop with because she is honest and has a great eye. She helped me find a navy dress that is comfortable, cute and in my budget! I also wanted to be able to wear shoes I already have so that was a plus. She found me a cute gold clutch for $6, can't beat that! Look for pics after next weekend :) While we were shopping, she was appalled with my brazier choice and insisted that I find something more appropriate. "You need thicker straps, keep those girls up!" and "your back must be killing you" I believe were her exact words. We found a great sale for the full figured gals and I walked away with a black and a nude that are more suitable for my "situation". Thanks Ruthie!
After shopping I wanted to try this new recipe for an at home egg mcmuffin that I saw on Pinterest, duh. I decided to make a double batch and share some with Andria and her boys.
I started with a dozen eggs, 12 english muffins and 8oz of cheese. I used a muffin tin sprayed with cooking spray to cook the eggs in the perfect egg sandwich shape.
I put these in the oven at 350 for 20 minutes. Split the english muffins in half and toast on a cookie sheet in the oven for 10 minutes. While eggs and muffins cook, cut the cheese for the sammies. The Pinterest recipe used shredded cheese but I cut my colby jack into squares.
When the eggs and muffins are ready I put the cheese down on the bottom, buttered the top and put the sammies together. I left off the butter and cheese for the dairy free 2 year old, don't worry! Put them back in the oven to melt the cheese and enjoy! I chose to freeze and individually wrap mine. First I put the cookie sheet in the freezer to cool them (for 1 hour) and get rid of some of the moisture. After freezing them I wrapped them individually in foil and placed them in a freezer safe bag. To reheat, put in the oven for 20 min or microwave (this will give you soggier sammie). Easy peasy!
All in all, a pretty productive Sunday. I'm off to deliver the goodies to Andria and boys then veg out and hope this cough and sore throat go away.
